Small Souffle Lemon Poppy Seed Cupcakes with crusting buttercream and fondant cut-outs.
Thanks so much for taking my orders in such short notice. I really loved the cuppies - from the looks to the taste. I think your recommendation of lemon poppy seed is a good combination to the buttercream. However, hubby & colleagues found the buttercream a tad too sweet. Strangely, family members who were new to lemon poppy seed thought the cake had gone sour (duh!!). Anyways, I will give it 4.5 stars out of 5!

The crusting buttercream (family of butter icing) is indeed sweet but yummy to many :o) Unfortunately, a certain amount of sugar is absolutely necessary to build the body of the icing. Less sugar or more oil. So, choose between the two or low sugar version of commercial buttercream (which is oily) or whipping cream :o)
