Lemon Cupcakes

You must be wondering why pink for daddy. The customer was actually planning to order 100 over cupcakes for her daughter's 1st birthday celebration sometime this month. Incidentally, her husband's birthday fell on 28 May. So, what better excuse then this day to order a 'dry run' with the designs and colors she's planning for her daughter. She said daddy won't mind the color, hehe...

Thanks so much for taking my orders in such short notice. I really loved the cuppies - from the looks to the taste. I think your recommendation of lemon poppy seed is a good combination to the buttercream. However, hubby & colleagues found the buttercream a tad too sweet. Strangely, family members who were new to lemon poppy seed thought the cake had gone sour (duh!!). Anyways, I will give it 4.5 stars out of 5!

Faith's comment: Thank you for the wonderful feedback. The crusting buttercream (family of butter icing) is indeed sweet but yummy to many :o) Unfortunately, a certain amount of sugar is absolutely necessary to build the body of the icing. Less sugar or more oil. So, choose between the two or low sugar version of commercial buttercream (which is oily) or whipping cream :o)
